Sunshine Fruit Salad

I love salads.. healthy, fresh, natural condiments, array of colourful veggies/fruits and a delightful dressing poured in and then tossed to create a lovely bowl of a filling and extremely appetising salad. Salads can be fun and innovative and this recipe that I am showing you guys today lives upto a tall order. Great as an “after”, snack, or even when you’re craving something fruity. It is so fun to make and can be tossed up in a jiffy.. loaded with the goodness of sweet, tangy citrus fruits, my sunshine fruit salad is truly lip smacking and super healthy. I find this to be a good way to get kids to eat healthy and nutritious foods and fill their day with sunshine and joy. So let’s get moving on to the recipe..

  • Preparation time: 10 minutes
  • Total time : 10 minutes

This recipe is for 2-3 servings

Ingredients: 

  • 2 ripe oranges
  • 1 ripe sweet lime
  • 1/2 a pineapple
  • 1/2 cup of pomegranate seeds
  • 1/4 cup of fresh mint
  • Dressing :
    • 1 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 tsp of honey
    • 1/2 tsp of salt and 1/4 tsp of pepper
    • 1/2 tsp of chat masala (optional)
    • 1 tsp of water

The whole fruits

  1. Start by preparing the fruits. I suggest you get the already prepared pineapple. Ask your fruit vendor to remove the outer covering and clean the pineapple for you so that you do not waste time doing so and can avoid having messy hands.. Wash the pineapple once again and dice into half. Store the other halve in the refrigerator and use later. Dice the halved pineapple into roughly 1 inch pieces. Then peel your oranges and quarter them and then quarter again to have eight pieces, remove the seeds and keep them aside.  N:B – if you’re using the local indian oranges (citrus indica) or basically the ones that have even sized segments in them which can be easily pulled out and eaten, then simply remove their white covering and de-seed. Then peel your sweet lime too and make sure you get rid of the tasteless, tough white membrane that covers the fruit and use only the inside. Quarter the quarters of the sweet lime and de seed. Then remove the seeds of the pomegranate and get rid of the white roots too. Make sure all the diced fruit pieces are the same size and there are no tough bits left on any of the fruits. Then transfer all the prepared fruits into a bowl
  2. The next step is to prepare the dressing. Simply mix all the ingredients mentioned above until everything gets incorporated (use a separate bowl to do this)

    Pour the dressing into the bowl of prepared fruits and add the mint leaves. Toss everything well until all the fruits are coated with the dressing. Chill in the fridge for upto 1 hour and serve (this step is optional.. however I recommend it as the flavours get enhanced while the salad gets chilled)
