Fig and mascarpone tart with caramel surprise

Tarts are one of my personal favourite desserts to eat, especially because of their lovely crusty texture and rich buttery flavour. They are very simple, yet so indulgent and rich. In the monotonous world of conventional desserts, especially in India, tarts are a great addition to your home dessert menu and serve as an effective option when baking for large gatherings and parties, because they can certainly feed and please a crowd. This recipe of mine reinstates the lost value of the once glorious figs. They are so uncommon these days, whether due to people’s misconception of their taste and texture, or due to the depleting creativity of chefs, in thinking of innovative ideas to use them. I have given a fresher, and lighter twist to the good old fig tart, with the addition of a deliciously rich mascarpone and cream layer and as the title states, a dreamy caramel surprise to lift  the senses, and some surprised eyebrows! Double chocolate chip cookie (eggless)

With globalisation spreading fast, American snacks are becoming increasingly popular throughout the world. One such snack is the simple yet delicious ‘cookie’ the quintessential snack that everyone loves. Cookies, especially chocolate cookies are my favourite to snack on throughout the day. With coffee in the morning, as a snack in the evening and some post-dinner too! Although they are readily available in most supermarkets these days, one needs to know that most of the brands use a lot of artificial flavourings and hence lack a good flavour. Some are also a little too sweet. Being disappointed about not being able to find the perfect cookie, I decided to make my own ‘double chocolate chip cookies’. Tender coconut pudding in chocolate cups

Have you heard of edible chocolate cups? Well, if not I’ll give you a brief introduction about them. They’re basically edible cups that are prepared solely using melted chocolate and then shaped into a cup by setting into moulds. However, mine doesn’t require you to buy any moulds or balloons (people use them too) as you simply require some disposable parchment muffin cups. You can add almost anything in these cups, from whipped cream, fresh fruits to even ice-cream.. However, I am going to  take it to a whole new level by actually showing you how to make a tender coconut pudding that  goes really well with chocolate and requires very few ingredients.
